Kiritsuke

Every knife expresses a unique touch, shaped by Swedish landscapes and refined by a chef’s hand.

The Plateau idea

Chef’s knife

The chef’s knife expresses the Plateau idea, stable base, rising control, calm precision. A gently curved edge supports rocking and push cuts. The spine is polished for comfort, the heel is trimmed to clear the board, and the tip is keen for detail. The blade geometry balances thinness for glide with enough backbone for daily work. The acid-etched finish protects the surface and keeps cuts smooth. The ebony handle is shaped for neutral wrist angle and long sessions at the board. Weight and balance are tuned so the knife feels like an extension of your hand.

Shaped like Ålleberg

Kiritsuke

Our kiritsuke takes its clean, forward line from Ålleberg. The blade has a subtle distal taper for control at the tip and power at the heel. An acid-etched finish gives a fine matte texture that lowers friction and helps food release. 
The grind is thin behind the edge for precision, with a softened spine and choil for comfort during long prep. The ebony handle is gently faceted for a secure grip and a natural hand position, with the balance point set close to the pinch for fast, accurate work.

A nod to the cliffs
 of Billingen

Nakiri

The nakiri is inspired by the vertical faces of Billingen. Its tall, flat profile keeps more of the blade on the board, which improves straight cuts and fine vegetable work. The acid-etched surface resists discoloration and keeps drag low through dense produce. A steady distal taper and even grind provide stability without feeling heavy. The ebony handle fills the palm without hotspots. Subtle shoulders guide the pinch grip and keep the knife tracking true.

Inspired by Mösseberg

Santoku

The santoku draws its calm strength from Mösseberg's vertical lines. A tall, flatter profile keeps more of the blade on the board for straight, confident cuts and fine chopping. The acid-etched matte finish lowers friction and helps food release. The grind is thin behind the edge for clean entry, with a subtle micro-bevel for durability. Spine and choil are softened for comfort during long prep. The ebony handle is gently faceted for a secure, natural pinch, and the balance sits close to the grip so the knife tracks fast and true.

The Falan workblade

Utility knife

The utility knife is the agile cutter shaped by the working rhythm of Falan, which is the city of Falköping. A slim, controllable tip handles detail work, while the narrow blade gives quick feedback on the board and around tight spaces. The acid-etched finish provides a fine matte texture that reduces drag and resists discoloration. A precise, thin grind delivers bite without feeling delicate. The spine and choil are eased for comfort. The ebony handle tapers to sit naturally in the hand, with neutral balance that keeps the knife light and exact in any grip.

Assio and Engvall receives 4 out of 5 plus in Aftonbladet’s major chef’s knife test

Assio and Engvall’s new Plateau Series has been featured in Aftonbladet’s major chef’s knife test. 
Both the Plateau P2 Chef’s Knife and the Plateau P4 Santoku received a rating of 4 out of 5 plus, which corresponds to a very good result.

In the test, twelve chef’s knives were evaluated by a jury consisting of three experienced professional chefs and two experienced home cooks. The knives were used in practical tasks that reflect real cooking, including slicing tomatoes and potatoes and chopping onions. Ergonomics, handling, perceived sharpness, and overall feel were considered in the final rating.

For us, the rating is an appreciated confirmation that our work with balance, grip, and overall feel comes through. 
We are also grateful for the opportunity to take part in the test and have our new series assessed in a setting where the knives are used in real work.

Aftonbladet’s knife tests regularly feature a broad selection of established knife brands, including Kai, Yaxell, Assio & Engvall, Global, Victorinox, Stelton, Sekiryu, Satake, Miyabi, Shiro Kamo, Mcusta, Kashima, Tamahagane, and many more.

Jury: Three professional chefs and two experienced home cooks
Tasks: Including tomatoes, potatoes, and onions to test both fine work and heavier prep.

About the Plateau P2 Chef’s Knife 

The Plateau P2 is designed for daily prep, with a profile that supports both rocking cuts and push cuts. It is thin behind the edge for smooth glide, while still offering stability for more demanding tasks. The matte, stonewashed and acid etched finish is designed for lower friction. 

About the Plateau P4 Santoku

The Plateau P4 is a compact Santoku with a flatter working feel, making it effective for push cuts and fine chopping. 
The balance sits close to the pinch grip for quick, natural control, with the same matte blade finish and handle feel as the rest of the series.
